3 T olive oil
1 large onion, chopped
1-2 cloves garlic, chopped
1 large (28oz) can diced tomatoes
2 c. water + 3 chicken boullion cubes
1/3 c. raw brown rice
salt
1 medium size zucchini cubed
1 medium size potato cubed

Directions:
Directions:
Saute onion and garlic in oil. Add tomatoes, water and boullion
cubes plus raw rice and salt. Bring to boil. Simmer 20 minutes
Add zucchini and potato and cook 20 minutes more or until rice
and veggies tender.
Serve with parmesan cheese
