3 medium cucumbers, peeled and sliced
¼ medium onion, sliced thin
¼ red pepper, diced
½ cup cider vinegar
¼ cup water
2-3 tbsps. Splenda
¼ tsp. salt
pepper to taste

Directions:
Directions:
Peel cucumbers and slice thin. Add sliced onion and red pepper.
In a separate bowl, whisk together vinegar, water, Splenda, salt and pepper. Pour over veggies. Cover and refrigerate for at least 3 hours or overnight if time permits.
