1 lb raw shrimp, shelled and de-veined
1 to 2 lb Mussels (frozen cooked mussels work well)
2 Tbsp olive oil
1 onion, slivered
2 garlic cloves, minced or pressed
4-5 carrots, sliced diagonally
1 red pepper, in large dice
1 green pepper, in large dice
1 can coconut milk
3 Tbsp red curry paste
2 cloves garlic, minced or pressed
(Mix and match any stir-fry veggies, other ideas: cauliflower, edamame beans, cut green beans, sweet potato cubes).

Rinse mussels in large strainer (I use frozen in-shell cooked mussels).
Heat oil in large skillet or pan. Saute onions and garlic for a couple of minutes. Add carrots and cook for a couple more minutes. Add peppers, cook for 2 more minutes. Remove vegetables from pan and reserve. Add shrimp to pan, cook until almost done. Add coconut milk and curry paste, stir until combined and heated through.
Add mussels (carefully choosing only those with unbroken shells). Remove meat from any with broken shells, add meat to dish and discard the broken shells.
Add reserved vegetables, heat for a few minutes until heated through.,
Serve over rice, or Cauliflower rice (see separate recipe)
