1 large head cauliflower, cut into large chunks
2 Tbsp extra-virgin olive oil

Place cauliflower chunks in a food processor in batches (don't over-crowd). Pulse until broken into rice-size pieces.NOTE: Don't over-process, if there are a few unprocessed chunks just pull them out and put them in the next batch. You don't want to puree the cauliflower.
Heat olive oil in a skillet over medium heat; add cauliflower 'rice', salt, and pepper. Stir to mix. Cover skillet and cook until heated through, 3 to 5 minutes. Remove lid and fluff 'rice' with a fork.
