7 cups flour, approximately (up to ½ flour can be whole wheat flour)
3 tbsp honey
1 tbsp salt
2 packages dry yeast
2 tbsp butter
2½ cups warm liquid

Directions:
Directions:
Mix ⅓ of the flour with honey, salt, yeast, and butter in bowl. Add liquid and mix until smooth. (May use electric beater 2 minutes at medium speed, then 2 minutes at high speed.)

Add rest of flour (NOT TOO MUCH) and knead until smooth, satiny, and elastic, about 10 minutes.

Let rise in greased bowl, covered with damp cloth in a draft-free location, until double in bulk, about 2 hours.

Punch down and let rise again until doubled.

Make into loaves or rolls, cover and let rise again in baking pans.

Bake at 375º for about 45 minutes for loaves, 25 minutes for rolls, until golden brown. Bread wills sound hollow when tapped on bottom when it is done.

Brush tops with butter.

Mimi always said to take your frustrations out on the bread dough. The harder it's worked the, the more smooth and elastic it will become. Perhaps that was how she maintained her humor as she raised 4 ornery boys, then dealt lovingly with 6 ornery grandchildren.
