Smoothered Turkey Necks Recipe

Ingredients: 14 -20 pieces of Turkey Neck 1/4 cup of oil 3 1/2 cups of onions chopped 1 cup of celery 1 cup of bell pepper 1 tablespoon of minced garlic 1/4 cup flour 1 1/2 quarts beef or chicken stock 2 tablespoons of Worcestershire sauce 1 cup of shallots 1/4 chopped parsley Cajun seasoning to taste

Directions:Season necks well preheat oven to 400 degrees. In large Dutch oven heat the oil on medium high heat. Add the larger ends of the necks and cook until golden brown on all sides. Regulate the heat to keep oil from burning. Continue until all the necks are well brown. Remove and keep warm. In the same Dutch oven add onions, celery, bell peppers and garlic. Saute for 3-5 minute stirring occasionally or until veggies are wilted. Sprinkle in flour and blend well into the veggies which will help thicken the finished sauce. Add 1 quart of the stock and Worcestershire sauce blend well into the veggies and bring to a rolling boil. Reduce the heat to simmer. Add the necks making sure the stock covers the necks by a minimum of half way. Add stock if necessary. Return the mixture to a rolling boil. Top with green onions and parsley. Cover and place in the oven and bake for two hours. Check for tenderness at an hour and a half.
It is imperative that the meat is tender enough that it falls from the bones if not continue to bake. |
