¾ lb. unpeeled, large fresh shrimp (I buy frozen - raw, peeled, deveined)
heavy duty foil*
1 tbsp. olive oil
2 tsp. Creole seasoning, divided
1 large red bell pepper, chopped
½ c. fresh or frozen whole kernel corn, thawed
½ c. (2 oz.) shredded Mexican cheese blend
2 tbsp. minced fresh cilantro
1 (15 oz.) can black beans, drained
hot cooked rice

Garnishes: fresh cilantro sprigs, shredded Mexican blend cheese

Peel & devein shrimp.

Place shrimp in center of 24”x18” sheet of foil; drizzle with oil and sprinkle with 1 tsp. Creole seasoning, tossing to coat.

Sprinkle bell pepper and next 3 ingredients over shrimp; top with black beans and remaining 1 tsp. Creole seasoning.

Fold opposite edges of foil together over shrimp, crimp and fold remaining edges to seal.

Place packet over medium-hot coals (350º-400º), and grill, covered with grill lid, 15 minutes - or bake at 375º for 35 minutes.

Serve over hot cooked rice.

This is a recipe I got from Aunt Nancy, and it continues to be one of my favorites. Liz fixes it at least a couple of times a month, always making enough for leftovers! We usually bake it, layering everything in a casserole dish instead of on foil.
