2 cups rolled oats
¾ cup shortening
1 cup raisins
1 cup sugar (part brown)
2 cups flour
1 tsp baking powder
2 eggs
1 cup coconut or nut meats
1 tsp baking soda mixed with 4 tbsp hot water
butterscotch chips, optional

Directions:

Melt shortening, add oats and let stand 30 minutes (less if quick oats are used). Add other ingredients in order, adding soda mixture last. Some butterscotch chips may be added if desired. Drop by spoonfuls on greased cookie sheet. Bake at 350º until brown
