1 cup shortening
2 cups sugar
3 eggs
1 cup sour milk
3 cups flour
½ tsp salt
2 tsp cinnamon
½ tsp each cloves and allspice
¼ tsp each nutmeg and ginger
⅓ cup warm water
1 tsp baking soda

SOUR MILK: 1 tbsp lemon juice or vinegar and enough milk to make 1 cup

Cream together shortening, sugar, and eggs and mix well. Add sour milk and beat well. Sift together flour, salt, and spices and add to wet mixture. Dissolve baking soda in warm water and add. Pour batter into greased and floured cake pans (two 9" or three 8"). Bake at 350º until toothpick comes out clean. Cool on wire rack.
 

MAPLE FROSTING

1⅓ cups sugar
⅔ cup grated maple sugar
½ cup butter
⅔ cup cream

Cook all ingredients to soft ball stage (234º - about 13 minutes). Cool. Beat until thick enough to spread.
 

PENUCHE FROSTING

1 cup brown sugar
½ cup white sugar
Few grains salt
½ cup milk*
2 tbsp butter*
1 tbsp corn syrup
½ tsp vanilla

Directions:
Directions:
Bring sugars, salt, milk, butter, and corn syrup slowly to the boiling point, stirring constantly. Boil 1 minute. Cool to lukewarm. Add vanilla and beat until thick enough to spread.

*For richer frosting, use heavy cream instead of milk and butter.

Iced with maple or penuche frosting (recipes included), this is Grandma's favorite cake. I make it for her on her birthday. Mimi was the original source of the recipe. I know this because Great-Grandma's recipe card says she got it from Marie. Grandma's recipe card says "I cut down some on the spices", but she's never complained when I use the full amount.
