1 cup of kosher salt to a gallon of water. ( Mark makes 2-3 gallons of water in order to cover the turkey) ¼ cup of worstershires sauce and ½ bottle of pecan liquid smoke
Black pepper and Red pepper

Directions:
Boil mixture and let cool completely. Pour over and let set for 10-12 hours. Remove turkey from brine and rinse completely inside and out. Pat dry, inject with Cajun injector then season in and out with Cajun seasonings or your choice of seasonings that do not have sugar in it. Cook in fryer 10 minutes per pound uncovered. For the last 30 minutes you put cover on. Remove turkey from fryer but not from rack. Let set for 30 minutes then remove from rack and slice turkey.
