1 stick margarine (4 oz)
2 c. flour
2 c. sugar
1 c. buttermilk
1 small can flaked coconut
5 eggs (separated)
1/2 c. shortening
1 tsp baking soda
1 tsp vanilla
1 c. chopped pecans, or walnuts

FROSTING:
8 oz package cream cheese, softened
1 lb powder sugar (I typically use more)
1/2 stick butter or margarine, softened
1 tsp vanilla

Directions:
Directions:
Cream margarine and shortening; add sugar. Add egg yolks and beat well. Combine soda and flour; add to creamed mixture alternately with buttermilk. Stir in vanilla. Add coconut and nuts. Fold in egg whites that have been stiffly beaten.

Pour into 3 greased and floured cake pans, bake at 350º for 25 - 30 minutes.

FROSTING: Beat cream cheese & butter until smooth; stir in sugar. Add vanilla and beat until smooth. Spread on cake layers; sprinkle top with chopped pecans.
