1 1/2 c. vegetable oil (I have used 3/4 c. apple sauce and 3/4 c. oil and it turns out great)
2 c. sugar
4 eggs
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
2 c. flour
3 c. finely grated carrots
1 c. finely chopped pecans
1/2 c. finely chopped maraschino cherries

FROSTING
8 oz cream cheese
1/2 c. butter or margarine
1 lb powder sugar (I typically use a bit more)
1 tsp vanilla

Directions:
Directions:
Mix oil and sugar well. Add eggs and mix well. (Recipe says to sift dry ingredients, but I never do). Add dry mixture to oil/sugar mixture and mix well. Add carrots, nuts and cherries. Bake at 350º until toothpick comes out clean.

For FROSTING: Soften cream cheese and butter/margarine; cream with powder sugar and vanilla. I typically just add powder sugar until it is the consistency I like.
