1 pound of Meat and Bone per quart of water

Directions:
Cut the meat into pieces and break the bones into small pieces. Add water and place on back of range. Simmer for 4-6 hours. Never boil it rapidly. Strain off the stock and place in a cool place so the fat rises to the top. Remove fat. Clean the stock by adding, when cold, the white of one egg per quart of stock. Always serve with lemon, shaved thin; croutons or forcemeat balls in soup,
