3 large or 1 Spanish onion, sliced
3 T. Butter
1/2 cup. Flour
5 cups Boiling Water
4 large Potatoes, mashed
1 quart Milk, boiling
Toasted or Fried Bread for serving

Directions:
Directions:
Skin and boil potatoes in water until soft, Drain. Place in large bowl and mash until smooth. Set aside.
In a large pan, melt butter and fry onions until brown. Add flour and stir constantly until browned. Pour in boiling water stirring steadily until all is in. Add boiling milk to the mashed potatoes. Stir to ensure there are no lumps. Pour milk and potato mixture into soup. Serve with toasted or fried bread.
