Notes: A number of years ago we had an Elder serving his mission in Hesperia, Ca. His name of was Elder Gary Bitsuie. He was of Navajo descendant, a really nice young man. Grandpa and I enjoyed when he and his companion would come visit. One night we had them over for dinner and he asked if he could fix dinner for us. And this is what he fixed. I love them just a little twist on regular tacos. He came back once and brought his wife and daughter.
