4-8 oz. boneless skinless chicken breasts
1 cup flour
½ tsp. poultry seasoning
½ tsp. salt
¼ tsp. black pepper
1-12 oz. can evaporated milk
1 cup yellow corn meal
1 cup Canola or vegetable oil for frying
1 cup chicken broth
1 cup milk

Directions:
Directions:
With meat hammer pound out chicken breasts to about ½ inch
thick. Combine flour, salt, poultry seasoning, and pepper in a
shallow dish. Pour evaporated milk into a shallow dish. Put corn
meal in a shallow dish or plate. Dredge chicken breast in flour
mixture, set aside flour mixture, dip breasts in milk , set aside
milk, then dredge breasts in corn meal. In 12 inch skillet, heat
oil on med-high heat, lower to medium heat and fry breasts for
3 minutes or until golden brown on each side. Put in pan in oven at
250° to keep warm while making the gravy.
GRAVY: Leave ¼ cup drippings in pan, whisk in ½ cup left over
seasoned flour, whisk until pasty. Gradually whisk in broth, add
1 cup milk and left over evaporated milk. Cook and stir over
medium heat until thickened. Pour over breasts and mashed
potatoes if desired. Makes 4 servings.
