Shortbread Recipe

2 cups of butter
1 cup icing sugar
1/4 tsp. vanilla
4 cups of flour
pinch of salt

Directions:
Directions:
Preheat oven to 350º

Cream butter and sugar until pale in colour. Add vanilla and salt. Add flour a bit at a time until well incorporated. Turn out onto counter and knead for 1 minute.

Chill for a 1/2 hour.

Either roll out into shapes, or roll into small balls and flatten a bit with a fork. Top with candied cherry piece. Bake for 15 - 25 minutes until lightly browned around the edges.
