Rhubarb Bread Recipe

1 C milk
1T lemonjuice
1 t vanilla

1 1/2 C brow sugar
2/3 C oil
1 egg

2 1/2 C flour
1 t salt
1 t baking soda
1 1/2 chopped rhubarb
1/2 C walnuts

Directions:
Directions:
Mix milk, lemon juice and vanilla and let stand 10 minutes
Combine brown sugar, oil and egg add milk mixture.
Combine flour salt, baking soda
Stir sugar mixture into flour mixture alternately with the milk mixture
until combined. Fold in rhubarb and nuts.
Pour batter into greased loaf pans (line with parchment)
Sprinkle topping over unbaked loafs.
Bake 40 minutes or until toothpick comes out clean

Jamie's favorite is rhubarb. Anything with rhubarb is yummy. We had lost of
rhubarb growing in Minnesota.
