12 eggs
2 C. shredded cheddar cheese
12 oz. milk
1 onion ( I used 3 TBS dried onion)
1 tsp. salt
2 C. cubed ham OR approx. 2 pounds sausage, 1 reg. 1 spicy, cooked together
1/2 tsp. pepper
1/8 tsp. cayenne pepper
30 oz. pkg shredded hash browns (thawed)
thinly sliced colored peppers for on top

Directions:
Directions:
In large bowl combine eggs, milk, salt, pepper and cayenne. Stir in potatoes, cheese, onions, and meat.
Pour into greased 9 X13. or bigger pan.
Arrange peppers.
Bake uncovered, at 350 degrees for at least an hour or until knife inserted near
center comes out clean
