2 T Olive oil
1 sm onion
1 1/4 rice short
1 lb white chicken
1/4 c or 2 lemons for juice
3 c broth
3 T butter
1/2 parmesan
2 t zest
3 c arugula

Directions:
Directions:
First saute onion and chicken

25 min

Heat a large dutch saucepan over medium heat. Add the butter, oil and onion and pieces of chicken. Cook for 6 to 8 minutes or until soft and light golden. Add rice, salt and pepper.

Add lemon 1 min then broth until boiled and until mostly absorbed.

Put the over covered 25 min. Stir in 1/2 cup of water, butter, parmesa, arugula. Serve immediatel
