• 1 Tbls olive oil
• 1 cup finely chopped onion
• 1 cup Arborio rice
• 2 cups chicken broth
• ¼ tsp. salt
• 6 oz fresh spinach (or 4 oz frozen, thawed) but more if you like
• ½ cup grated parmesan or grated goat cheddar cheese


Directions:
Directions:
Preheat oven to 400 degrees.

Heat oil in a large pan. Add onion and cook 4 minutes until tender.

Add rice and stir well. Add broth and salt.

Bring to a simmer and cook 7 minutes. Stir in half of cheese.

Cover and bake 15 minutes. Remove from oven.

Stir in spinach and remaining cheese. Cover and bake an additional 15 minutes or until remaining liquid is absorbed.

This is so good Catherine called from Italy for the recipe. That just didn’t seem right given that the Italians invented risotto but….
