2-3 large ripe plantains. (You want a sweeter plantain for this recipe, so plantain should be soft and very ripe. Usually with a lot of black on the outside.)

Slice plantain into chips.
Fry in oil until they are slightly browned.

When done with the three (Nigerian Stew, Beans and Fried Plantains) recipes together. The stew is poured over the Parboiled rice, the beans and plantains can be mixed in or be eaten separately.
