1 ½ c short-grain brown rice
1-2 tbs EVOO
1 onion roughly chopped
20 or so grape tomatoes (whole)
salt, pepper, garlic powder, paprika to taste
2 packages pargyot (boneless chicken thighs)
3 c water

Directions:
Directions:
Saute rice until lightly browned
Add chopped onion and saute until slightly soft
Add tomatoes until just beginning to change color and get soft
Place chicken on top of rice, onion and tomatoes and stir until rice scantly covers the chicken
Add spices and water and bring just to a boil.
Cover and cook until rice is cooked 45-50 minutes, checking from time to time to ensure there is enough water.
