1 cup buttermilk
2 cups sugar
1 tsp baking soda
2 cups pecan halves
1 tsp vanilla
1 Tbsp butter

Directions:
Directions:
In a large pot, combine buttermilk, sugar, and baking soda. Stir the mixture until the sugar is completely dissolved, then place the pot on low to medium heat and let it boil to a softball stage, stirring constantly. The mixture will turn a brownish color. Once soft ball stage is reached, remove the pot from the heat, then add pecan halves, vanilla, and butter. Beat the mixture briskly until it becomes glossy and starts to get very thick. Quickly spoon it onto greased wax paper, making little patties. If you like, and have the time before the candy hardens, you can turn the pecan halves right side up, which looks prettier. Let the candy completely cool before removing it from the waxed paper. Should the mixture harden before you've had time to get it all onto the paper, erturn it to the heat for a few seconds, or until it is again the right consistency.

Tip: Softball stage has been reached when you can dip a spoon into the candy, let a small amount drip into cool water and you can form the syrup into a soft ball with your fingers.

Susy: my mom was a big fan of Hints From Heloise. Mom clipped this famous and popular recipe from the newspaper on November 7, 1983, and added it to her wood recipe box. That's how I know it was a "keeper!"
