1/4 cup of butter

4 cups of thinly sliced onions

4 cans condensed beef bouillon

2 tbsp. of grated parmesan cheese

6 slices of French bread

1/4 c. grated cheese

Directions:
Directions:
Saute onions in butter until golden. In medium sauce pan, combine bouillon and onion; bring to a boil. Reduce heat and simmer for 30 minutes. Toast bread on both sides and sprinkle with cheese.
Broil until cheese is bubbly. Pour soup into individual bowls. Float 1 slice bread, cheese side up in each bowl.

Eric and I first tried onion soup on a trip to the mountains in the winter. It was a spur of the moment trip, cold and snowing, and we stopped at a restaurant and tried onion soup for the first time. It was delicious! This recipe brings back great memories of that discovery and trying new things. We were recently talking about making this!
