3 eggs
1 cup sugar
⅔ cup pumpkin
1 tsp lemon juice
¾ cup flour
1 tsp baking powder
1 tsp. ginger
½ tsp nutmeg
2 tsp cinnamon
½ tsp salt
1 cup nuts

Filling:
1 cup powdered sugar
1 (8 oz) package cream cheese, softened
4 Tbsp butter, melted
½ tsp vanilla

Directions:
Directions:
Mix pumpkin with lemon juice. Beat eggs and sugar on high. Stir in pumpkin mixture. Sift together dry ingredients and fold into pumpkin mixture. Spread onto greased and floured 18X10-inch jellyroll pan or cookie sheet with sides. Top with nuts. bake at 375º for 15 minutes. Turn out into clean towel. Sprinkle with powder sugar. Start rolling at long edge and roll towel and cake together. Put into refrigerator and cool at least 4 hours.

Beat filling ingredients together until smooth. Unroll cake, remove towel, and spread on filling. Roll up again and chill until filling is firmly set, at least 1 hour. Cut into 1" thick slices.
