2 packages of chopped broccoli (small packages)
(cook at drain the chopped broccoli and set aside)

2 tablespoons of finely chopped onions

1 can of mushroom soup

2 raw eggs beaten well

2 cups of mild cheddar cheese - grated

3/4 cup of mayonnaise

Directions:

Mix ingredients above and fold in the broccoli. Salt and pepper to taste. Pour into a baking dish. Sprinkle 2 cups of crushed Ritz crackers on top. when you are ready to bake - not before.

Bake at 350 degrees for 30 minutes uncovered.

We were introduced to this recipe by my mother-in-law Mrs. Dukes. She was a great cook and made a lot of casseroles. Mom had dinner at her house for one of our birthdays and tried this recipe for the first time. She really liked it and she would ask me to make it occasionally when I was at her house in Lake City. She told me "I cook for you, so you can cook for me". I did exactly what she told me to do. She didn't make many casseroles but she really enjoyed the great ones, like the one above.
