Ingredients: |
Ingredients: Combine the following in a large mixing bowl in the order listed below:
1 1/4 cup of corn oil
2 cups of sugar
3 cups of peeled and cut up apples (toasted a little)
3 well beaten eggs
In separate bowl sift:
3 cups plain flour
1 teaspoon soda
1/2 teaspoon salt
Add above to apple mixture along with 2 teaspoons of vanilla
Mix well by hand & bake at 325 degrees for 30-35 minutes in 13 x 9 pan sprayed with Baker's Joy or greased and floured
For Frosting:
Cream together 11 ounces of cream cheese, 1/2 stick of butter, 2 teaspoons vanilla, 16 ounces of confectioners sugar and 1 cup of chopped pecans.
Apply frosting to cake when it has cooled.

Notes: Linda Creel introduced this excellent cake to the family and everyone loved it! It has the perfect mixture of fresh and sweet - not too heavy. Excellent with coffee! It has now become a requirement for all large family celebrations. She tried different desserts and there was a family riot (hehe).
