1 T. evoo
small onion sliced thinly
2 cloves minced garlic
4 zucchini sliced ¼ inch thick
1 (14oz) can stewed tomatoes
S/P to taste
1 cup shredded cheddar cheese

Directions:
Directions:
Saute onions and garlic for 5 minutes. Add the zucchini, tomatoes and S/P. Cook 8-10 minutes and serve topped with I shredded cheese
