½ cup butter
½ cup celery, finely diced
½ cup carrots, finely diced
½ cup onion, finely diced
1 tsp. white pepper
¾ tsp. dry mustard
1 tsp. salt
½ tsp. Worcestershire
½ cup corn starch
2 cups chicken broth
1-12 oz. can evaporated milk
1-12 oz. can beer, room temperature
1-15 oz. jar Cheez Whiz

In 5 quart saucepan, melt butter and stir in celery, carrots, and onion. Stir in pepper, salt, mustard and Worcestershire. Whisk in corn starch until mixed well. Slowly add chicken broth and whisk until thickened, about 3-4 minutes. Whisk in milk and slowly add beer, until it comes to a low boil, reduce heat to medium low and cook uncovered for 10 minutes. Add Cheez Whiz and stir until melted and heated through. Makes 6 servings.
