In a large pot add the following: DO NOT DRAIN CANS:
1 can black beans
1 can chili beans
1 can pinto beans
1 can Rotel
1 1/2 c. salsa
Stir well
When this begins to boil add:
1 # of meat of your choice, ground beef or turkey, cooked and crumbled (meat optional)
1/4 c. Ranch dressing or 1 pkg dried ranch dressing mix
1 pkg taco seasoning
Mix well again.
Add:
1 can fiesta cheese soup
1 soup can water




Directions:

Simmer on low for 30 to 40 minutes.

If you are having sandwiches or other foods the meat will not be missed.

You can make a soup bar with chips, sour cream and cheese, chopped green onions, etc.

Put it in a crockpot and cook it all day.

I have multiplied this by 6 for a crowd and put it in a roaster. It takes awhile to heat up in this quantity.
A friend of Steve and Laura's was at a Royal Ranger luncheon I made this for in North Little Rock, AR. and as a 1st year fireman he was in charge of meals. He jumped on this recipe for the firehouse. A couple of months later he called me and said I lost the recipe and they are wanting me to make it next shift.
