1 tbsp water
¼ c Italian style bread crumbs
⅓ c Parmesan cheese
4 pork chops
1 tbsp olive oil

Directions:

Preheat oven to 400º F. Line cookie sheet with foil. Place cooling rack on cookie sheet. Set aside.

In small bowl, beat 1 egg and 1 tbsp water. In another small bowl, mix 1/4 c Italian style bread crumbs and 1/3 c Parmesan cheese.

Dip each of 4 pork chops into egg mixture, then into bread crumb mixture, turning to evenly oat. Place coated pork chops on cookie sheet.

Heat 10-inch skillet over high heat. Add 1 tbsp olive oil, swirling to coat the pan. Cook the coated pork chops in oil about 2 minutes on each side until brown. Place back on cookie sheet.

Bake until pork is no longer pink in center and meat thermometer inserted in center reads 145ºF (10-20 minutes, depending on the thickness of the chops)

Don't overcook the pork chops! They are absolutely delicious when removed in time. Let them rest about 5 minutes before serving.
