1 1/2 c. green split peas
1 lg. onion, chopped
2 celery stalks, chopped
1 lg. leek, chopped
1 lg. clove garlic, halved
1 herb bouquet
1-2 ham hocks, well washed
Salt and pepper

Directions:
Directions:
Pick over the peas to remove any stones, etc. Wash and drain peas. Place in a 4 qt. pan with the vegetables, herb bouquet, ham hocks and 2 1/2 qt. water. Bring to a simmer. Skim for several minutes until scum ceases to rise. Cover loosely and simmer about 1 1/2 hours or until peas are tender, stirring up occasionally in case they are sticking to the bottom. Discard bones and herb bouquet. Puree in blender, then pass through a sieve. Carefully correct seasoning.
