1/2 c (1 stick) unsalted butter
2 tbsp sugar
1 tsp vanilla
1 c chopped pecans
1 cup cake flour
Confectioners sugar

Preheat oven to 300º

Beat until soft 1 stick of butter. Add & blend until creamy 2 tbsp sugar. Add Vanilla. Measure, then grind in a nut grinder, 1 cup pecan meats.

Sift before measuring 1 cup cake flour.

Stir the pecans & the flour into the butter mixture. Roll the dough into small balls. Place balls on a greased cooking sheet and bake about 30 minutes. Roll while hot in confectioners sugar.

Makes about 40 1½ inch balls.

Be careful not to overcook. When the bottom of a cookie is light golden brown, remove from oven. I have a bowl filled with confectioners sugar ready. It is important to roll the hot cookies in the sugar to absorb the sweetness. I then place the cookies in a tin and add more confectioners sugar on top. These cookies are very popular. I often double, triple or quadruple the recipe!
