4 Filet Mignon steaks - whatever size you can afford- 4 - 6 oz. Or you can use good boneless sirloins
3 T butter
1 small onion, chopped
1 pound of mushrooms, sliced
1 cup red wine
2 english muffins or 4 pieces of any bread

Directions:
Directions:
Preheat oven to 350 degrees.

In a fry pan melt 1 tablespoon of butter and sear the steaks about 2-3 minutes on each side. Remove from pan and place in a baking dish. Put in oven no more than 10 minutes for medium - less for rarer meat.

In the same fry pan melt remaining butter and cook onions and mushrooms until brown. Add wine and simmer until reduced.

Toast english muffins. Place a steak on each muffin and pour the wine sauce on top!
