Peel and dice 8 Granny Smith apples - or as many as you like.

1 c orange juice

sugar

cinnamon if desired

Directions:
Directions:
Put sliced and peeled apples into a pot

Put orange juice over and mix around; add enough water to make about 1 inch of liquid at bottom of pot.

Cook over medium heat until bubbly; reduce heat to low and cook till apples are tender.

You may need to add water - just check to see how dry it is.

Add as much sugar as you like.

Blend with an immersion blender for smooth applesauce; leave as is for chunky applesauce.

I usually cook at least 8 apples - this gives enough applesauce to either freeze or send home with a kid that loves it.
