3 eggs
1 cup oil
2 cups sugar
3 tsp vanilla
3 cups grated zucchini
3 cups flour
1 tsp baking soda
1 tsp salt
1 1/4 tsp baking powder
1 Tbsp cinnamon
1/2 cup oat bran

Directions:
Directions:
Beat eggs until foamy and add sugar, oil, zucchini and vanilla. Mix until incorporated and then add dry ingredients. Mix lightly and pour into 2 greased and sugared (or floured) bread pans. Bake at 350 º for 1 hr or until tooth pick comes out clean near the center of the loaves. Allow to cool on a baking rack before removing them from the pans.
