1 tbsp extra virgin olive oil
½ cup carrots, chopped
½ cup celery, chopped
1 sweet onion, chopped
salt & pepper
4 cups raw broccoli
2-3 garlic cloves
8 cups chicken broth(eyeball it to "soupiness" you prefer)
1-2 tbsp. fresh parsley, chopped (or skip it if you don't want to buy parsley for one recipe)
½ tsp dried thyme
2 large chicken breasts (cooked) or 3 cups of rotisserie chicken, chopped

Directions:

1. Heat oil in large soup pot over medium heat, add carrots, celery, onion, and season with salt and pepper,
saute the mixture until tender, about 10 minutes.
2. Add broccoli and garlic, season with more salt and pepper, then saute for 2-3 minutes. Add the chicken
broth, parsley dried, thyme and bring to boil.
3. Add chopped chicken to the soup: serve with your favorite add-ins.
4. Serve with warm, crusty, buttery bread (because obviously) and/or side salad.



2 cups cooked quinoa, rice noodles (we cook whatever grain or noodle we're using separately from the soup so those who want it can have it their way!)
¼ cup grated parmesan cheese
Make a double batch and freeze half!
