1 large chicken (cut into pieces)
OR
legs, thighs and chicken strips equivalent to a large chicken
1 - 1/2 c. long-grain rice
1 can cream of mushroom soup
1 can cream of celery soup
1 packet dry onion soup mix
2 soup cans of water
Salt & Pepper to taste

Directions:
Preheat oven to 350º. In a 9X13 baking dish, cover bottom with rice. Mix soups, dry soup mix, and water. Pour 1/2 soup mixture over rice. Place chicken over soup/rice taking care not to overlap. Pour remaining soup mix over chicken. Add salt and pepper to taste. Cover with foil and bake 1 - 1/2 hours until chicken is done. When it looks nearly done, remove foil to brown the chicken a bit.
