5 lb bag potatoes
4 beef bullion cubes
1 Onion
a few carrots (mainly for color)
1 lb bacon
flour
milk
stick butter or margarine
Salt & Pepper to taste

Directions:
Directions:
Peel and dice potatoes into small cubes. Cut onion into small pieces. Cut carrots into small pieces or grate using the large grater. Cover potatoes, carrots and onions with water, and add bullion cubes. Boil until soft. Add salt and pepper to taste.

In a separate pan, dice bacon, and fry until crisp. Add flour to make a roux (like making bacon gravy). When mixture is slightly browned, pour into the potato, carrot, onion mixture. Add milk to get it the consistency desired.

Add cheese and green onions if desired.
