1 lb. ground chuck
½ tsp. pepper
1 lg. onion (chopped)
1 T. dried basil
3 stalks celery
1 T. parsley
1 tsp. salt
1 tsp. oregano
½ tsp. Garlic powder OR
2 cloves garlic
1 (12 oz.) can tomato paste
3-4 c. water

Directions:
Saute' chopped onion until transparent. Add chopped celery and saute' about 2 minutes longer. Add ground meat and brown. Strain oil out of cooked beef. Season with salt, pepper, garlic powder or garlic, basil, parsley and oregano. Add tomato paste and water and simmer 1½ hours. Can season more to taste. (This is the recipe that was used many years when the Angelelotti's Ran their restaurant in Triumph and also used for the Italian Fest each spring. It is a classic. Enjoy!!}
