2 T. olive oil
2 medium onions, diced finely
2 carrots, peeled, and diced finely
2 stalks celery, diced finely
1 large meaty ham bone, or 3 cups cubed ham
4 bay leaves
12 cups chicken broth
1 lb. dried split peas, rinsed
1 tsp. dried thyme
1 tsp. salt
1 tsp. white pepper

Directions:
Directions:
In a 5 quart soup pot heat olive oil on med-high heat and saute onions, carrots and celery 6 minutes. Add chicken broth, ham and bay leaves. Bring to a boil, reduce heat add split peas, salt, pepper and thyme. Simmer 1˝ hours or until peas dissolve. Remove bay leaf before serving Serves 8 to 10.
