Rockfish Filets (Thick as possible)
Stick of Butter
Garlic 3-5 cloves chopped
Tarragon
Rosemary
Basil
Salt
Lime 1-2 (cut in half)

Start grill preferably charcoal kettle but gas grill is ok.

Set Large sheet of heavy-duty aluminum foils on the counter, using large enough sheet for 2 filets per set up. Grease the foil, Lay Fish filet skin side down.

Lay pads of butter across fish. (more is always better), squeeze lime juice across fish, salt and pepper to taste. Spread herbs, springs or chopped across fish. Wrap foil around fish with tenting over the top. Make sure to only fold once on the top so you may check fish while cooking. Place foil packed on grill and cook until fish nice and flaky. The trick for pulling fish packets off grill is to slide then onto cookie sheet when done cooking.

Goes great with veggies and potatoes cooked on the grill along side the fish you can't go wrong.
