3 c Bread flour
1 pkg Instant yeast (14-oz)
1½ tsp Salt
1 ½ c Water

Combine flour, yeast and salt in a large bowl.  Add lukewarm water and stir until blended.  The dough will be shaggy (sticky).  Cover bowl with plastic wrap.  Let dough rest about 4 hours at warm room temperature, about 70 degrees.  (Placing in sun also helps.)

Lightly oil a work surface and place dough on it.  Fold in over on itself once or twice.  Put on parchment paper or linen towel with cornmeal. Cover loosely with plastic wrap and let it rest at least 30 min. more. 

At least half an hour before dough is ready, heat oven to 450º.  Put a 3 to 4 quart heavy, covered pot (cast iron, enamel, Pyrex or ceramic) in the oven as it heats. 

When the dough is ready, carefully remove the pot from oven.  Slide your hand under the dough and put it into the pot, seam side up.  Shake pan once or twice. Bake 450º with the lid on 30 minutes, then take the lid off and bake another 15-30 until beautifully brown and when you tap the top of it is sounds hollow.

Let rest 5 minutes. The crust will be very crisp.  Slice with a serrated knife while still warm.  Inside will be tender and chewy.  Great on a cold day with Hamburger soup
