2 c. sliced mushrooms
½ c. chopped onion
2 cloves garlic, minced
2 T. olive oil
1 c. Arborio rice
3 c. chicken broth
¾ c. bite-size asparagus or broccoli
1 medium tomato, diced
¼ c. shredded carrot
1 c. shredded fontina or muenster cheese
¼ c. grated parmesan cheese
3 T. fresh basil or parsley, chopped
tomato slices

Directions:
Directions:
Warm chicken broth and keep on low. Saute mushrooms, onion, and garlic in oil. Add rice. Add 1 cup of broth at a time until absorbed, then add another cup, repeat (approx. 30 minutes). Add broccoli or asparagus after a few minutes add tomato and carrots. At the end add cheese and herbs.
