2 T. Olive Oil
2 T. diced onion
1 ¼ c. Arborio rice
⅓ c. white wine
4 - 5 c. chicken broth
12 oz. shrimp
1 c. peas
1 T. lemon rind
1 T. fresh lemon juice
½ t. salt
Fresh ground pepper
Chopped basil or Italian parsley
Grated parmesan

Warm chicken broth and keep on low simmer. Saute oil, onion and rice. Add 1 cup of broth at a time until absorbed, then add another cup, etc. (approx. 30 minutes). Add shrimp, peas and lemon rind with the last cup of broth. Add lemon juice, salt, pepper and parmesan with the chopped basil or parsley at the end just before serving.
