6 Chicken breast, boneless & skinless
1/2 tsp Salt
1/8 tsp White Pepper
1/4 tsp Paprika
6 tbsp Butter, divided
1/2 lb Mushrooms
4 c Chicken or Beef broth-warm
2 tsp Lemon Juice
6 tbsp Flour
1/2 c Sherry
1 Artichoke hearts (14 oz can)

Directions:
Directions:
Season chicken with salt, pepper and paprika.

Saute in the chicken in the 3 tbsp butter over medium heat until golden brown on the bottom, about 5 minutes per side until browned and cooked through, remove from pan and set aside.

In the same pan melt 3 tbsp butter, sprinkle 3 tbsp flour and cook it, whisking continuously, for at least 5 minutes over low heat to remove the raw flavor of the flour. Add the warmed chicken broth slowly to the roux while continuing to whisk it. Bring it to a simmer whisking continuously to prevent lumps.

Add mushrooms, sherry and lemon juice, cook on low stirring until slightly thickened.

Lightly spray 2-quart oblong baking dish, add chicken and artichoke hearts to bottom of dish, cover with sauce

Bake in preheated oven 375º for 40 minutes
