1/4 pound of Irish butter
1 cup of sugar
2 extra large eggs
3/4 cup of molasses
2-1/2 cup of cake flour
2 teaspoons of baking soda
1/2 teaspoon of salt
2 teaspoons of powdered ginger

Directions:
Directions:
Preheat oven to 350º F.

Butter and lightly flour (with cake flour) a 9-inch square cake pan.

Cream the butter, add the sugar, and beat until light and fluffy.

Add the eggs and beat well.

Add 3/4 cup boiling water and the molasses and blend.

Mix together the cake flour, baking soda, salt and ginger. Add to the first mixture, combining thoroughly.

Pour into the cake pan and bake 35-45 minutes, until a toothpick comes out clean.

Cool in the pan for 5 minutes before turning out onto a plate.

Serve warm with sweetened whipped cream.
