8oz Gruyere cheese, shredded
2 sprigs fresh rosemary, finely diced, stems removed
8oz Wellshire Farms thick cut applewood smoked bacon
1 pint organic heavy whipping cream

-- Prepare the bacon

1) Fry bacon in pan until crispy, but not burned.
2) Drain fat and set bacon aside on plate with paper towels to dry.
3) Chop bacon into small pieces, or bits. Set aside.

-- Make the sauce

1) Heat Cream on low heat in sauce pan until light steam begins to rise
2) Add bacon and rosemary, simmer on low heat for 10 minutes.
3) Slowly add shredded cheese while continuing to slowly mix. Sauce should begin to thicken.
4) Reduce heat to lowest setting, stir regularly.

Serve while hot.

I first made this sauce as alternative to traditional gravy at a Thanksgiving feast in the mountains outside of Boulder, Colorado in 2006. It's great on most things, including mashed potatoes, poultry, vegetables, stuffing and more!
