3/4 cup bourbon
1/2 cup butter
1/4 cup maple syrup
1/4 cup brown sugar
salt and black pepper to taste
2 teaspoons chopped fresh dill
1 1/2 lbs organic carrots, peeled and sliced into 1/2 inch pieces

Directions:
Directions:
1. Saute bourbon in a pan over medium heat until reduced by 1/2. Careful, it will evaporate if you step away from the cooktop!
2. Add the butter, maple syrup, brown sugar, salt and pepper, chopped dill and carrots. Toss to combine.
3. Reduce the heat to medium low and cook for 15-20 minutes or until the carrots are tender to taste.
4. Remove from heat and garnish with additional dill.
